White Truffle Honey Vinaigrette
This vinaigrette is Chef Lee’s favorite salad dressing which is also one of her own original recipes that was inspired by a visit to a San Francisco restaurant. The salad she had at the restaurant had a white truffle vinaigrette dressing on it, which she absolutely LOVED. From that moment, she was determined to recreate the dressing once she got home. So, she came up with her own recipe which is now her absolute favorite. She likes to dress up her salads with blue cheese stuffed figs or dates, but it’s the dressing that makes it.
2 Tbsp. honey
1/2 Tbsp. Dijon mustard
2 Tbsp. apple cider vinegar
1/2 cup extra virgin olive oil
2 tsp. white truffle oil
salt and white pepper to taste
Put honey, mustard and vinegar in the food processor. Slowly add the oil to emulsify the ingredients together into a creamy consistency.
Put dressing into a bowl and add a little bit of salt and white pepper. Mix together.
Voila! That’s all there is to it! We hope you enjoy this recipe. Remember, with vinaigrette dressings, you need acid, you need oil, and you need sugar of some sort (preferably honey). With any combination of these three together, you can create all sorts of variations yourself.
