What evokes a holiday feeling like the scent of baking peanut butter cookies? This treat contains all the coziness and warmth of a crackling fireplace and makes for the perfect Christmas cookie for all the upcoming holiday parties and festivities. They are easy to make, and the best part is that they are delicious… and gluten-free.
Gluten Free Peanut Butter Cookies
1 cup peanut butter
1 cup brown sugar
1 egg
1 tsp vanilla
2 tsp baking soda
1 cup mix-ins: chocolate chips, peanuts, etc. (optional)
Preheat oven to 350F.
Cream together peanut butter, brown sugar and baking soda until well combined (30 sec to 1 min).
Beat in the egg and vanilla. If you are using add-ins now is the time to fold them in gently.
Scoop onto baking sheets and bake for 5 to 10 minutes (depending on the size) or until the edges are just starting to brown. Take the cookies out of the oven and let them sit on the hot cookie sheet for 5 minutes.*
Transfer to wire rack to cool.
* Very critical step and should not be skipped! Unless you want cookie pieces instead of cookies!
